Desiccated Coconut is the ingredient produced from fresh coconut meat that has been shelled, pared, ground, steam blanched, dried and packed aseptically.

Physical:
A) Colour : White, free from yellow specks or other discolorations
B) Flavour : Mild, sweet, no off flavour

Chemical:
A) Moisture : 3.0 % maximum
B) Free Fatty Acid : 0.10% max (as Lauric Acid)
C) pH : 6.1 - 6.7 D) Residual SO2 : 50 ppm maximum (when required)

Granulation:
Mars Medium, Medium, Macaroon, Fine and Extra fine
